Four reasons venue owners pick up the phone.

Hospitality and retail plumbing lives or dies on trading-day continuity. The four scenarios below cover most of what crosses Peter’s desk from venue operators. The discipline behind all of them is the same: walk the site quiet, schedule for off-peak, leave the space ready for service.

Scenario 01

New venue fit-out.

Lease signed, fit-out in motion, kitchen rough-in due. Hot water sizing, grease arrestor install and backflow protection all need to be sorted before the council inspector turns up and signs off the food premises.

Scenario 02

Trading and something’s failed.

Front of house is full, the kitchen’s mid-service, and a toilet, hot water unit, leaking basin or burst tap has gone down. You can’t shut for it. We triage callouts on account into the next available crew slot, including out-of-hours at uplifted rates.

Typical scope Isolate, contain, get the venue trading again, schedule the full repair around service if needed.
Scenario 03

Compliance is overdue.

Backflow testing or trade-waste paperwork has lapsed, the auditor or water authority is chasing, and you need a licensed plumber to test, document and lodge before it escalates. Annual testing handled, paperwork on letterhead.

Scenario 04

Equipment swap between services.

Refurb in progress, combi oven going in, dishwasher relocation, gas cooktop swap or sink moving. The window is overnight or between services. Pre-plan the plumbing, land the install clean, hand back ready for prep.

Typical scope Disconnect, relocate or rough-in for the new unit, commission, leak test, hand back before the next service starts.
What we do (and don’t do)

We do the plumbing scope on hospitality and retail venues: kitchen fit-offs, backflow protection, grease arrestor servicing, hot water, gas, ongoing site maintenance and tenancy works across cafés, pubs, clubs, restaurants, salons and retail tenants. SWMS, certs of currency, account terms, capability statement, food-premises plumbing certification, all in the standard pack. Other specialist trades sit outside our scope. We coordinate cleanly with your shopfitter, builder, electrician and refrigeration trade so the venue lands on schedule.

Scope 01 / Kitchen fit-off & refit

Kitchen fit-off and refit.

Commercial kitchen plumbing for new venues, refits, equipment swaps and hot water sized to the trading load. Sink stations, dishwasher feeds, combi oven connections, food preparation taps, hot water flow to suit the busiest service of the week.

We install the unit and clear it when it blocks. The trade-waste application, approval and ongoing compliance sit with the venue owner — and the unit size is set as part of that trade-waste approval, not something we nominate. Once it’s approved, we fit it in the right spot and keep it flowing.

§04 / Western Sydney hospitality & retail

Club kitchens, café strips and retail tenants.

Western Sydney has a huge hospitality and retail spread. RSL clubs and pubs through to café strips in Penrith, Kingswood, Glenmore Park, St Marys, and centre tenants inside Westfield. Each venue type has a different operational rhythm and a different plumbing risk profile.

A club kitchen is six-figure equipment, daily prep, hundreds of covers a service. A single-tenant café might be one chef and one window. PVS handles both with the same trading-day discipline: walk the site quiet, agree the isolation points, schedule the install for off-peak, leave the venue ready for service.

Long-tenure proof: Penrith RSL Club has been a hospitality account for 20+ years. That kind of relationship doesn’t survive callouts that drag past the service window. It survives because the work lands on time, on the program, and on the paperwork the venue’s auditors actually want to see.

§05 / How a job actually runs

From quiet-time walk to clean handover.

Most hospitality and retail jobs follow this sequence. Reactive callouts get triaged at step 3; larger fit-out and refit scopes run the full pipeline. Either way the discipline is the same: walk the venue, get the paperwork in, schedule around service.

Walk the venue when it’s quiet.

Visit between services or before opening. Identify isolation points, hot water sizing, grease arrestor location, backflow position and any access constraints during trade.

SWMS & certs.

SWMS for the scope, certs of currency where the venue’s group requires them, induction completed where the centre or building manager runs one. Account terms agreed before the first invoice.

Schedule off-peak.

Install or fit-out work scheduled for overnight, between services, or full close days. Reactive callouts triaged into the next available crew slot, including after-hours at uplifted rates.

Install cleanly.

Floor protection laid, isolation and lock-out tag-out where the venue is still trading. Commission, leak test, hand the area back swept and ready. Photos through the job for the handover pack.

Hand over.

As-builts where applicable, compliance certificates on letterhead with the NSW licence against the work, and a 12-month workmanship warranty on the install. Invoice and paperwork emailed once the venue is back trading.

The questions venue owners ask before the first job.

Direct answers from a contractor who’s been on Western Sydney hospitality and retail sites for more than two decades. If your question isn’t here, send it through with the venue details and we’ll add it.

Can you work overnight or between services?
Yes. Standard hours are 7am to 4pm weekdays, but for hospitality and retail work we routinely run installs and refits outside those hours so the venue keeps trading. Rates uplift from 4pm weekdays and on weekends, and we factor that into the quote upfront so there are no surprises on the invoice. For long-tenure accounts we already know the trading pattern and pre-schedule around it.
Do you handle backflow compliance for hospitality venues?
Yes. Backflow protection is a standard part of the hospitality scope. We install the correct device for the hazard rating, test annually, and lodge the paperwork with Sydney Water. If your existing device has failed or your compliance is overdue, we can attend, test, repair where needed, and bring the lodgement current. Most multi-site operators have us run their whole annual backflow program in one scheduled batch.
How does the grease arrestor work with PVS?
Straightforward. The trade-waste application and approval sit with you as the venue owner, and the unit size is set as part of that approval — not something we nominate. Once it’s approved, we install it in the approved location. From there our role is keeping it clear: when it blocks, we clear it. The scheduled pump-outs and the trade-waste paperwork stay with you and your licensed waste contractor, so lock those in as part of your compliance.
Can you fit-off a new commercial kitchen?
Yes. New kitchen fit-offs are a regular scope. Send through the kitchen plans and equipment schedule and we’ll quote the rough-in, hot water sizing, grease arrestor, backflow, equipment connections and commissioning as one package. We coordinate with your shopfitter, electrician and refrigeration trade so the venue lands on schedule and the council inspection runs cleanly.
Multi-site retail group, can you handle that?
Yes. Multi-site venues run under one account with one point of contact at PVS. Callouts logged against the site, scheduled visits batched for efficiency, compliance programs run across the whole portfolio at the same cadence. If your group has a contractor management portal, we can pre-register and have the certs of currency on file before the first job. Reporting back to head office on what was done where, and what’s coming due, sits inside the service.
Do you offer account terms?
Yes, account terms are available for ongoing hospitality and retail clients. The usual arrangement is a brief account application up front, callouts logged through a single point of contact, monthly invoicing on agreed terms. For one-off jobs the quote total is payable on completion. Most multi-site operators move onto account terms after the first couple of jobs once the working pattern is clear.
Are you certified for food-premises plumbing?
Yes. NSW Licence 309265C, ABN 49 617 149 596, fully licensed for commercial and food-premises plumbing including backflow testing and trade-waste compliance. Certificates issued on PVS letterhead with the licence number against the work, suitable for council, Sydney Water and your venue’s auditors. Public liability and workers compensation certs of currency on file for venue groups that require them.
What’s covered by the 12-month workmanship warranty?
12 months on the install, parts and labour. If a joint we made or a fitting we installed fails inside that window from a workmanship cause, we return and rectify at no charge. Failures that trace back to wear and tear, water quality, misuse, or trade conditions outside the install spec sit outside warranty, but we’ll still attend on standard rates and document the cause cleanly for your records.
