§01 / In short

A trap that’s approved before it’s in the ground.

Short answer

A business that cooks or serves hot food needs a grease trap and a Sydney Water trade waste agreement. The trade waste application and approval sit with you as the venue owner, applied for through Sydney Water Tap in before any pre-treatment is installed; the trap size, from 1,000 to 5,000 litres, is set by Sydney Water on assessment, not nominated by us.

PVS Plumbing installs, replaces and repairs grease traps and the kitchen drainage around them for cafes, clubs, restaurants and food manufacturers across Western Sydney. Pump-outs are done by an authorised Wastesafe transporter at the frequency Sydney Water sets, not by the plumber.

§02 / How it works

Approval first, then the trap.

The steps in order, and whose job each one is.

1

You apply.

The trade waste application goes to Sydney Water through Tap in, before any pre-treatment is installed. As the venue owner, this one is yours to lodge.

2

Sydney Water sets the size.

On assessment, Sydney Water decides the trap size and the approved location, generally between 1,000 and 5,000 litres. We do not nominate this.

3

We install it.

Once approved, we install the trap in the approved location, to the manufacturer’s instructions and the Plumbing Code of Australia, and connect the kitchen drainage around it.

4

Certified for sign-off.

Documentation supplied for council and Sydney Water sign-off of the food premises.

5

Cleared when it blocks.

From there our role is keeping it clear. Scheduled pump-outs stay with you and your Wastesafe-authorised transporter, at the frequency Sydney Water sets.

A guide, not the final word.

Sydney Water sets the exact size on assessment. This is the range it publishes as a guide.

Sydney Water grease trap sizing guide, checked September 2026. Your Tap in assessment sets the actual figure.

Minimum 1,000 litres Below this, a trap cannot capture grease efficiently
Maximum, single trap 5,000 litres Keeps pump-outs and clean-outs practical

§07 / Grease trap FAQ

Grease Trap FAQ: What Venue Owners in Western Sydney Ask Us.

Direct answers from a licensed NSW plumber. General information for sites in the Sydney Water area.

Does my venue need a grease trap?
If you cook or serve hot food, Sydney Water requires a grease trap and a trade waste agreement before you start discharging wastewater. This applies to cafes, restaurants, clubs, pubs and food manufacturers. Apply through Sydney Water Tap in before any pre-treatment is installed.
Who decides what size grease trap I need?
Sydney Water, when it assesses your trade waste application. The published guide is a minimum of 1,000 litres, since a smaller trap cannot capture grease efficiently, and a maximum of 5,000 litres per trap, with a combined cap of 30,000 litres where a site runs more than one. We install to the size and location Sydney Water approves; we do not nominate it.
Do you pump out grease traps?
No. Pump-outs are done by an authorised Wastesafe transporter, and Sydney Water sets how often, based on your trap’s size and the volume and quality of wastewater it handles. Our role is installing the trap and keeping it clear between pump-outs, and clearing it if it blocks.
Can you get the trade waste approval for me?
The application itself is lodged by you as the venue owner through Sydney Water Tap in, since it is tied to your business and your trade waste agreement. We are glad to talk you through what the application needs and to quote the install as soon as the approval and the site details come back.
Our trap keeps blocking the kitchen drains. What’s going on?
Usually the trap is undersized for what the kitchen now puts through it, the pump-out interval has slipped, or the kitchen drainage around the trap has a fault of its own. We inspect the trap and the drainage together, clear the blockage, and tell you honestly which of the three is the real cause.
We’re replacing an old trap. Does anything need to change with Sydney Water?
If the new trap is a different size or in a different location, yes: the trade waste agreement needs to be varied through Tap in before we install it. If it is a like-for-like replacement, tell us and we will confirm what your existing agreement requires before we start.
We’re closing the kitchen. Can you remove the trap?
Yes. An authorised Wastesafe transporter empties the trap first, then we disconnect and remove it and make good the drainage. Tell Sydney Water through Tap in that the trade waste agreement is ending.
